This recipe was handed down from my Grandmon. Whenever I make this soup, I imagine her making it over a fire for her children on a cold autumn day! She was full of life and always enjoyed the fall season.
Recipe:
Fill a soup kettle with enough water to cover 1 bag of pre-soaked mixed beans (washed and picked over dried beans that were pre-soaked overnight). Add one vegetable bullion cube to the water and beans, and bring to a boil. Allow soup to simmer briskly while preparing vegetables. Cut up a small onion, 3 or 4 stalks of celery including leaves, and 1/2 cup of parsley - add these to soup and salt to taste. When the beans are done, add 3 or 4 medium sized raw potatoes, cut in small cubes and continue cooking until potatoes are done. If too much liquid boils away, while soup is cooking, add water but not enough to thin soup too much. When potatoes are done, add 1 large can of tomatoes and remove from fire. This is a delightful soup!
