Marshmallow-less Cocoa Krispies Treats


Lately my pantry has been overflowing with cereal. So what better way to use cereal than to make some simple Krispies Treats! Well, except I didn’t have any marshmallows in that pantry! But I did have ingredients to make them anyway!


Ingredients
6 cups Rice Krispies cereal
½ cup of chocolate chips (optional, could have used Cocoa Krispies instead)
1 cup light corn syrup
½ cup sugar
2 tablespoon margarine (I like using Earth Balance natural buttery spread)
1/2 teaspoon vanilla extract

* Will need a Large saucepan (large enough to fit 6 cups of cereal and additional ingredients)

Directions

Prepare a 13 x 9 pan with a light coat of cooking spray, or lined with wax paper – then set aside
Over medium heat, melt corn syrup and sugar in large saucepan
Add margarine and vanilla - stir until completely melted - then remove from heat
Add cereal and chocolate chips to melted mixture - Stir until well coated!
Press mixture into the 13x9 pan – use a rubber spatula to evenly push mixture into pan
Allow mixture to cool for about 1/2 hour
Once cooled, cut into 2-inch squares

Serves 10?… (I ate 4 servings!)
Also this recipe, without the marshmallows is animal friendly, so even vegetarians may like it too :)

Looks good! I used to change recipes often when we stuck to a vegan diet. Egg replacer was key - either commercial stuff or just plain old soy flour work. I have to admit, I think things work a bit better now that we use dairy and eggs again, but it's good to know I can do it in a pinch.
