What do you do with all those tomatoes? Part 2, A Tomato scramble!


I often make this recipe, and we never have leftovers! It serves 3 hungry people :)

Tomato Scramble, topped with Creamy Sauce, on Whole Grain Toast

Ingredients:

Creamy Sauce (this could be doubled if you like extra sauce)
  • 2 tablespoons flour
  • 3/4 cup cold vegetable broth or water
  • 1/4 tsp salt
  • Pinch of ground pepper
  • 2 tablespoons nutritional yeast
  • 1/4 tsp garlic powder
  • Pinch of turmeric (optional)
  • 1/4 teaspoon lemon juice (optional)
  • 1/4 teaspoon yellow mustard
  • 1 tablespoon of margarine (I like earth balance margarine)
Stir-fry Scramble
  • 1/4 small onion, chopped
  • 1 cup sliced mushrooms chopped
  • 4 diced drained tomatoes
  • 1 14oz package of extra firm tofu – not silken tofu!
  • Olive oil for frying
6 pieces of whole grain bread


Directions:

Drain the package of tofu: be sure to carefully squeeze out as much water as possible. Then in a large bowl, crumble the drained tofu and set aside.

Sauce: Mix Over medium heat, mix flour, salt, pepper, nutritional yeast, turmeric, and garlic powder, add the broth or water and continue to mix until thoroughly dissolved. Once the mixture is thick and bubbling, add lemon juice, margarine, and mustard. Remove from heat and set aside

Stir Fry Veggies: Heat olive oil over medium heat. Sauté the chopped onion and mushrooms until soft, then add crumbled tofu. Let the tofu cook for a few minutes on each side until lightly golden, then mix in the diced tomatoes and fry for a couple minutes more.


Toast your bread. Serve scramble over toast with creamy sauce!



*Be sure to use a good non-stick frying pan. I usually fry this scramble in my 10-inch pre-seasoned cast iron Skillet. It an inexpensive cast iron set, but it works well with proper care!

That sounds fabulous! I make a tofu-scramble at my house on occasion. We love ours with green bell pepper and fresh cilantro in it. Mmmmm...
