Frugal Vegetarian Menu Plan
Monday
Dinner: Potato Chimichangas with beans and salad,
Dessert: Sparkling Fruit Salad from allrecipes.com
Tuesday
Dinner: Vegetarian Pizza on Rustic Pizza Dough, toppings; Newman's Own Marinara sauce, chopped mushrooms, olives, onions, sun dried tomatoes, red and green peppers, artichokes, and 1/2 bag of Morningstar Farms Meal Starters Crumbles
Dessert: Big Mama's Apple Dumplins from Country Mommie's site. I tried this recipe on Saturday - it was easy and delicious!!
Wednesday
Dinner: Creamy Butternut Squash Soup and French Onion Bread
Dessert: Pumpkin Chocolate Chip Cookies from allrecipes.com
Thursday
Dinner: Veggie Tofu-scramble served with hash browns and whole grain rolls
Dessert: Fruit Smoothie (Banana, orange juice, frozen strawberries, ice, and tsp flax seed - blended until smooth)
Friday
Dinner: Witch Soup, and biscuits
Dessert: Halloween Candy treats ;)
Saturday
Dinner: Veggie Chili (canned kidney beans slow cooked with; chili spice, onions, peppers, tomatoes, corn, and 1/2 bag of Morningstar Farms Meal Starters Crumbles ) Vegan Cornbread from recipezaar.com. I add 1/4 cup of brown sugar to this recipe, since I like sweet cornbread! I double the recipe, since it tastes so good! It's nice to have the leftover cornbread for breakfast, served with fruit!
Dessert: Apple Sauce
Sunday
Dinner: Easy Veggie Pot Pie
Dessert: Cranberry-Orange Muffins from Fatfree Vegan Kitchen

Your whole menu looks great. I like the idea of witch soup. We eat mostly vegetarian so I'm always looking to see what other like-minded folks are cooking.
